Low-Fat Era Arrives at White House

WASHINGTON It's official: Low-fat American cooking will replacehigh-fat French cuisine at the White House.

Walter S. Scheib III, a graduate of the Culinary Institute ofAmerica, was hired Tuesday as executive chef, replacingFrench-trained Pierre Chambrin.

Scheib is a specialist in cooking organically grown fruits andvegetables and other low-fat foods.

"Cuisine is like music, it depends on what your mood is and whatyou feel like," he said in a recent interview.

"There are influences from the American Southwest; there areinfluences from the American Northwest.
